This festival aims to celebrate the Santa Ninfa sausage, which is still prepared by hand as over a century ago.
To obtain a top-notch product, several phases are involved, first and foremost the careful selection of meat from pigs fed naturally and without the use of any antibiotics.
Flavors are then added to the hand-ground mixture, followed by oxygenation which allows for perfect flavouring.
The ingredients used are all local, for example the salt from the salt pans of Trapani, the dried tomatoes, the lemons from Belìce, the capers from Pantelleria and the fennel seeds from the Biviere Valley.
In some shops it is also possible to find the sausage with caciocavallo from Palermo.
This tasty product can be consumed both fresh and grilled, you just need to be guided by the inspiration of the moment.
Finally, it should be noted that, starting from 1996, the sausage of Santa Ninfa è protected by a special consortium, whose task is to monitor the entire production process, i.e. breeding, slaughter, processors, butchers, restaurateurs, transporters and traders.

How to get to Santa Ninfa to participate in the Sausage Festival

The municipality of Santa Ninfa is located about fifty minutes awayauto from Trapani.
To reach the festival we recommend taking the A29 motorway towards E933.
If you do not intend to use the motorway, the route will be extended by a quarter of an hour and in this case you will need to take Provincial Road 8 and State Road 188.
Once you arrive on site, park your vehicle in a street out of reach of the stands.
At the moment there is no public transport available that leads to Santa Ninfa.
