The IT ricotta boasts very ancient origins; mentions have been found in a publication of the historian Gallo who lived in the sixteenth century.
This cheese can be based on goat or cow milk and, before being cooked in a wood oven for two nights, it is left to dry in the sun for a period of about a month.
It gives its best when accompanied with honey, jams and fruit/vegetable marmalades.
